Catarina Ramirez farms coffee in the same area as Catarina Leticia, who we've purchased from in the past. In our recent travels to Guatemala, we mistakenly met Catarina Ramirez while attempting to meet the other Catarina. It became a happy accident and we fell in love with Mrs. Ramirez as well.
Part of the confusion of these coffees trails is because the people of Com speak an old indigenous language of Popte, which made it quite an adventure to get in contact with the correct Catarina. Either way, we're happy to have found ourselves in Com, purchasing beautiful coffees from beautiful peoples.
The road to Aldea Com is steep, winding and seemingly never ending. The road scales high up the mountains, overlooking the coffee farms across the valleys. When we reached the top, we immediately fell in love in with the small village of Com.

The department Huehuetenango Guatemala borders Mexico's southern border. Within Huehuetenango, there are multiple municipalities that produce coffee. Each municipality is unique. What they all have in common is clean, complex coffee. The farmers of Huehue have a unique washing process and is found in parts of Africa, but typically not in Latin America. After the coffee is depulped, it gets fermented in tubs and then it is spread into a long concrete canal that is flooded with water to rinse and wash the mucilage off of the coffee. Producers will walk down the canal with a large paddle, agitating and rinsing the coffee as water rushes by. Not all producers use washing canals, but it's something we've noticed is unique to the area.
