DESCRIPTION
The road to Aldea Com is steep, winding and seemingly never ending. The road scales high up the mountains, overlooking the coffee farms across the valleys. When we reached the top, we immediately fell in love in with the small village of Com.
Catarina Leticia is a third generation coffee farmer in Com who has helped organize Jovemcafe; a group of 25 women focused on sustainable agriculture and infrastructure in the community.
Catarina's farm is named Quejna, where she depulps her coffee with a manual depulper and dry ferments the seeds for 24-36hours before washing. After a second washing, the seeds are dried on a patio for twelve hours.

Huehuetenango, Guatemala

The Sierra de los Cuchumatanes mountain range is located near the northwestern Mexican border. The high elevations provide an ideal climate for farmers to cultivate high quality coffee.

Washed

Coffee Cherries are peeled, and fruit content is fermented and washed away before being dried.

Classic and bold flavors balanced by rich and syrupy sweet notes
