The road to Aldea Com is steep, winding and seemingly never ending. The road scales high up the mountains, overlooking the coffee farms across the valleys. When we reached the top, we immediately fell in love in with the small village of Com.
Catarina Quejna is a third generation coffee farmer in Com who has helped organize Jovemcafe; a group of 25 women focused on sustainable agriculture and infrastructure in the community. They raise chickens and grow a variety of fruit trees, including coffee!

Catarina depulps her coffee with a manual depulper and dry ferments the seeds for 24-36hours before washing. After a second washing, the seeds are dried on a patio for twelve hours.
