The road to Aldea Com is steep, winding and seemingly never ending. The road scales high up the mountains, overlooking the coffee farms across the valleys. When we reached the top, we immediately fell in love in with the small village of Com.

Catarina's farm is named Quejna, where she depulps her coffee with a manual depulper and dry ferments the seeds for 24-36hours before washing. After a second washing, the seeds are dried on a patio for twelve hours.
